He constantly experiments with different varieties of beans to achieve the right fragrance of soy beans, the right texture, and a sweet aftertaste in the finished product.

The tofu made at the Hayashi Tofu Shop can be enjoyed at the Tofuchaya Hayashi restaurant located nearby the Kimpusen-ji temple.

The best recommended specialty of the Hayashi Tofu Shop is their zaru-dofu, or soft tofu in a zaru basket, that is drained of water in just the right way to allow you to enjoy its softness and rich flavor simultaneously.

We particularly recommend the Tofu Dzukushi Zen (Tofu Set Meal) for 1,300 Yen plus tax that features this zaru dofu accompanied by ganmodoki (crushed tofu mixed with vegetables and fried in oil) and sesame tofu.

Tourists from overseas almost universally exclaim that “this is the first time I’ve ever eat tofu that tastes this good” because it is uncommon to find tofu outside Japan that is soft and brings out the true flavor of the soy beans.
